The founder as we know is IP Man. He was the teacher of Bruce Lee when the former moved to Hong Kong. My son learned Xing Yi which I understood the founder was related to IP Man. Any information and clarifications on this ?

I understand the founder of Wing Chun was a woman, not Ip Man.
It was said that the founder, Wu Mei 伍枚 taught her skills to Yan Yung Chun 嚴詠春 - in Cantonese it is pronounced Yim Wing Chun. This style and skill was named after Yim Wing Chun.
Wu Mei herself was said to be from Shaolin Temple, but I do not see how Shaolin Temple would have a nun or an abbess in its confines. I would presume she was from the Southern Shaolin Temple in Fujian Province, not the one from Henan Province because Wing Chun is more popular in the South than the North.
I suppose Ip Man can be considered the father of Wing Chun in the sense that his disciples spread the Wing Chun skills internationally.
Ip Man's claim to international fame was that he was Bruce Lee's teacher.
I understand XingYi Style has its roots in Northern China. I do not believe it is directly related to Wing Chun.

Ip Man isn't the founder. According to himself, the lineage is: Ng Mui -Yim Wing-chun -Leung Bok-chau (Yim's husband) - Leung Lan-kwai -Wong Wah-bo - Leung Yee-tai - Leung Jan - Chan Wah-shun -Yip Man (also learned from Ng Chung-sok, Leung Bik)
The current confirmed source of Xingyi is Ji Longfeng (1602-1683) who (either he or some lineages) claim that he found about it in a manual written by the Song general Yue Fei.
Wing Chun is a Southern style while Xingyi is a Northern style.
