Mooncake ingredient costs has definitely gone up this year. This year, I stuck with cooking the lotus paste and red bean paste only. I skipped the 5 nuts (kernels) mooncake filling.
The "ham" mentioned by the Melvin (the guest wearing red T-shirt) at the about 4 minute mark is Jin Hua 金华 Ham 火腿 mooncake, often shortened to 金腿.
This is basically 5 kernel mooncake with Jin Hua Ham in it. Jin Hua is a town in Zhejiang, China. The ham is named after the town. Jin Hua ham is hard, and it takes quite a bit of preparation before it can be incorporated in the 5 kernel mooncake as a filling.
One year, I happen to be in Yunnan shortly before Mid-Autumn/mooncake festival, and their ham mooncake 火腿月饼 was delicious. I tried to replicate it, but it was not successful because I had access to JinHua ham only, not the Yunnan ham. This mooncake needed Yunnan Ham.
Other mooncake flavours/fillings I tried when I was in Yunnan were rose sugar, and lard-sugar. I liked the rose sugar filling but the lard filling was just sweet, not too much else.
At the 5:30 mark, the presenter mentioned the cempedak filling for mooncake available in Indonesia. I think I ate the nangka or cempedak filling, but it was not to my liking.

cempedak/ nangka filling for mooncake? I've never tried that, but imagining it...shouldn't be delicious though. Durian filling for mooncake is nice, and durian filling with salted egg yolk is awesome. Indonesian Medan and Vietnam have this durian filling mooncake. Anyway, Yunnan's ham mooncake is awesome, and they have it all year round (y) I did not realise Yunnan ham mooncake is available all year round - this calls for a trip to Yunnan!
